I've been to Acadia only in the "off" seasons, and it's quite nice. Camping in early spring is a good time because the bugs aren't out yet, and a crisp autumn weekend is a great time for a hike (especially for the foliage views).
A few years back we visited the park in early August and there were tons of people there. It was still fun but I agree with trvlgrl that visiting Acadia in the 'off' seasons is the best. We just came back from a Memorial Day weekend visit and there weren't many people there and it was FABULOUS.
I have been to Acadia in the "off season" and during the height of tourist season. I have even gone during Fourth of July and Labor Day weekends and had wonderful trips. But I stay in campgrounds in the southern or middle part of the island. And I play as far west as I can. The west coast of the island has much less boat traffic and is great for paddling. The carriage roads and hiking trails are great. You may see quite a few people but it's not like you have to wait in line to bike or reach a mountain summit. Avoid the Jordan Pond House, the parking lot on the north end of Eagle Lake, the road up Cadillac Mountain and Bar Harbor.
Depends on what you like to do. I like to go to Acadia and hitting up the Jordan Pond House for some popovers -- but the JPH isn't open in the off season. I went to Bar Harbor and Acadia in January and it was so cold that I couldn't even enjoy it. I much prefer it in the fall right before the local shops and restaurants close for the season. The foliage is beautiful and you can still get a delicious meal!
Geddy's Rocks! (Great pizza in Bar Harbor, year-round) But there will always be a line there, even in early October (of course, that's Oktoberfest weekend).
